Egg and Tomato Sandwich
So, for our first recipe we are going to try something very simple but unbelievably delicious. Our ingredients are so simple that everyone can get them. This was the very first recipe I learnt from my mother in-law in my first year of marriage. It was very simple to make but I was shocked at how delicious it was.
I was at their home when they had guests and she wanted to make something that would not take so long but that tasted delicious.
INGREDIENTS
A loaf of sliced bread
(You can use white or brown bread though white bread is what I'll be using)
4 Hard boiled Eggs
4 Medium size Tomatoes
(The tomatoes need to be ripe and FIRM)
Margarine, Butter or Mayonnaise
(I have used all three at different times and all work beautifully)
Salt
Black Pepper (Optional)
How to Make:
First, boil your eggs. Make sure when you put the eggs in water that they don't float. If they do, they are bad so throw them out. The eggs should sink to the bottom of your pot.
I usually start to boil my eggs with cold water that covers the eggs completely by at least a centimeter to an inch of water. Turn the heat to medium and once the water begins to boil, begin to stir the eggs constantly in a clockwise direction. This helps to center the yoke. For a hard boiled egg (which is what we need for this recipe), it needs to simmer in the gentle boiling water for 8 minutes.
(To simmer is to use medium heat and this allows food to cook slowly and evenly).
Once the eggs have been in boiling water for 8 minutes, it's time to remove them. Put the eggs in cold water. I usually put the eggs under cold running water before placing them in a bowl of cold water. With a spoon, I gently crack the shell of the eggs then I leave them in the cold water. This allows water to sip under the shell and it ensures that once the eggs are finally cool, they peel with ease.
Next, wash your tomatoes and then put them in hot water for 30 seconds. This is not to cook the tomatoes. It is to help you peel off the outer skin of the tomatoes.
Once you have your eggs and tomatoes peeled, slice them. You can use an egg slicer for the eggs or just use a nice sharp knife.
Slice your eggs and tomatoes into slim slices but do not slice them too thin. Now put the sliced eggs and the sliced tomatoes in separate plates. (Sometimes tomatoes taste sour because farmers don't wait for them to ripen first). If this is the case, sprinkle some sugar on the sliced tomatoes and mix it in gently and let the sugar flavor the tomatoes. After 2 minutes, pour out the juices from the tomatoes otherwise the sliced tomatoes will make your sandwich soggy.
Now, get the bread and put your spread (margarine, butter or mayonnaise) on each slice. First, place a slice of tomato at one corner of the slice of bread then place another slice of tomato in the opposite corner. Now, do the same thing to the eggs putting a slice of egg on each slice of tomato. You may sprinkle some salt and black pepper on the eggs and tomatoes if you wish)
Next cover the slice with the eggs and tomatoes with another slice of bread that you have applied your spread on.
Now, cut the sandwich into triangles. Make sure to cut the triangles in such a way that the egg and tomato is nicely nestled within the triangle. Now, go on to the next sandwich and keep going until you have finished the eggs and tomatoes and THAT is your egg and Tomato Sandwich!!!
